Eggnog Whoopie Pies Recipe

While trimming the tree this season I was inspired to create an eggnoggy tasty treat.  After a couple of tries this is what I finally came up with.  The recipe is based upon homemade eggnog because I abhor grocery store eggnog.  Though I cannot attest to the results, it seems feasible that purchased eggnog could be used to save a little time.  If you do decide to make your own eggnog it’s best to prepare it along with the eggnog pastry cream a day ahead to allow for proper cooling.

Yoko-Ono-Yaki

We used to have a wonderful restaurant in Overland Park called One Bite that introduced us to the Okonomi-Yaki, a Japanese savory pancake/omelet dish that we love. One Bite has a few variations, including the Cheese Bomb Yaki that was super tasty! Unfortunately, One Bite is closing it’s doors!   They promised to return in 2012 in the form of a new restaurant in Kansas City’s Westport area (One Bite Sama Zama?!?), but in the mean time I decided had to try to recreate a yaki of my very own. This dish was based off of JustHungry‘s Okonomiyaki, Osaka style.  When I began, I was planning on following the recipe, but by the time I was done gathering ingredients, I had Americanized it, or rather Mullieized it.  I decided that it probably isn’t a traditional Okonomiyaki, so this is my Yoko-Ono-Yaki, because Yoko Ono is sorta Asian like this dish.

Chipotle Margarita Pickled Onions

These boozy onions are delicious on tacos…and sandwiches…and burgers…and pizza…and salads…and ya know, pretty much everything.  You should give ‘em a try, yo!
Ingredients:
  • 1 Cup Fresh Orange Juice
  • 1/2 Cup Fresh Lime Juice
  • 1/4 Cup White Wine Vinegar
  • 1/4 Cup Tequilla
  • 1/4 Cup Cilantro, chopped
  • 1 Tablespoon Agave Syrup
  • 1 Tablespoon Chipotle Peppers in Adobo, chopped
  • 1 Tablespoon Salt (or more to desired taste)
  • 2 Red Onions, sliced and blanched 15 seconds

Directions: Combine and refrigerate for a at least a few hours up to a couple of weeks. The longer they sit, the more margarita-y they will be.

The West Memphis Three are FREE!!!

Today is a monumental day for the American justice system! The West Memphis Three are free on an Alford Plea in which they must plead guilty, but may maintain their innocence. It’s a complicated way to save ass on the prosecutor’s part, while making it blatantly obvious they do not believe the men are guilty.  If the prosecutor’s office believe they were guilty then two men with life sentences and another man that was on death row hours ago would not be walking free as I speak. Congratulations and good luck Damien, Jesse, and Jason! We here at Recycled Kitty are over joyed with today’s events and are proud supporters! It’s not over yet, their names and records must be cleared, but today is a great victory for three young men confined for 18 long, undeserved years!

80/35 Music Festival – Des Moines, IA – July 2-3, 2011

Last week I saw an ad for the 80/35 music festival in Des Moines.  The lineup seemed pretty sweet, especially considering the price was only $60 for both days.   If I would have bought tickets a few months ago, I could have gotten a ticket for $35 (!), which is a mind blowing deal when you look at comparable festivals.  So I went ahead and checked for hotel availability in the area and found a Marriott that was like 3 blocks away from the festival.   Cat’s brother agreed to come over and dog-sit, so we bought tickets and were set for our impromptu vacation. Father’s Day Smoked Brisket & Bean BBQ

I know Father’s Day was technically last week, but we are celebrating this weekend instead with a tasty BBQ on Sunday.   So we’re firing up the smoker and doing all the work on Saturday, so we can roll in to my folks place with a bunch of already prepared food and we can spend the time with the family instead of cooking. Jack, Stella and the tasty fertilizer spikes

Good for veggies, tasty for dogs!

So Cat was heading out to insert these fertilizer spikes into our new garden.  Now our garden consists of the veggies in the ground and a fence surrounding the area made up of wooden stakes and deer netting, which is pretty thin.  Anyways, Cat was heading out, bag in hand, and apparently the Jobes Organics Fertilizer Spikes bag sounds very similar to a Duck Jerkey bag, because Stella’s interest was deeply aroused.  Cat attempted to let Stella smell the spikes, thinking that she would see that there was nothing tasty in the bag.   But Stella found the scent of the fertilizer spikes even more intoxicating than the typical duck jerkey.    We have been eating vegan around the house lately, so I am going to assume that Stella has finally hopped on the bandwagon and wanted to try out some of the tasty new vegan treats.  So Cat put the spikes into the ground and we went along with our day.   A couple hours later, someone had knocked down a weak area of the netting and made their way around the entire garden, digging up delicious fertilizer spikes.  They also destroyed at least one tomato plant, and I think a cucumber plant.

However we never actually caught Stella in the garden, so who knows?   Well cut to today, Sunday morning, Cat heads off to work as I try to sleep in a little bit.    It is very cool for this time of year, and Cat left our sliding glass door in the kitchen open allowing the dogs to freely come and go.   Jack was sleeping in the bedroom with me and I hear him get up and make his way outside.   I remained in bed for around 5 minutes then got up and went outside to check on them.   Stella was at the perimeter of the fence and Jack was full on inside, wandering about.

So now, I’m not sure who was originally responsible or if both dogs are in it together.   I can see Stella being the mastermind, having Jack do her bidding, but then again…

UPDATE:
Upon smelling the boy and his bodily stank, I feel that my initial thoughts of Stella’s involvement might have been unfounded.
